I’ve eaten a lot of catfish in this town, often while suspicious of the surroundings rapid-fire. The list that follows is the result of that research, spanning everything from a chophouse where the servers remember your name to a lunch counter where the vinyl booths remember your elbows.

The catch at Blue Hook alone, with its Cajun fried rice, justifies the hunt. A cathedral of fine dining or a soul food spot with sweet cabbage.

I walked into Blue Hook Cajun Seafood & Bar with low expectations, mostly because I was hungry and grumpy. That changed fast. The catfish is worth the trip; it's crisp, flaky, and not a grease bomb. The live band added a nice bit of charm, even if they played one song too many about a dog. Service went beyond the standard, and the prices beat just about every other joint in town. I was suspicious of a side called Cajun fried rice, but it shines, all buttery and smoky. My only complaint is the parking. It's fine. You'll survive. So will I.

Hook & Reel has a big combo that feeds four. I brought three skeptics. We left full and quiet. The crabmeat fries impressed everyone, which shocked me, because I usually distrust anything with that much cheese. Our server Fallon gave great service, quick with refills and refills of napkins. The boils themselves beat the catfish; in fact, the catfish came across as a bit of a sideliner. It was decent but not the star. I will say this: if you want a messy meal with friends and don't care about your shirt, this is your spot. I went home stained and happy.

Fat Ernie's Family Dining does not bother with frills. It does not need to. The catfish arrived as a simple, honest fillet, fried without any foolishness. The place felt like a lunch counter from an older, better age, where the coffee is hot, the waitress calls you honey, and the booths have that waxy vinyl. I had a plate of it, with fries and coleslaw, and I left with nothing to complain about except that I had to work after. This is the kind of place that reminds you you are in Kansas. That is not an insult to me. Keep it simple.

AVI might be the best complete meal in Wichita. I say this as someone who is usually suspicious of places with a bar in the name and a reservation line. The room is quiet, polished, and the service was attentive to the point of being comedic, like a butler who knows my coffee order before I do. I ordered the grilled Caesar with blackened shrimp, and that was a fine decision. The catfish, though, I only had on a later visit. It was proper. Parking gets validated across the street, which feels like a minor miracle for city dining. It is a decent spot for a work date, if you must.

I do not say this lightly: the fried catfish fillets at The Eatery are amazing. They came out golden, crunchy, moist inside, and they did not require any tartar sauce to rescue them. That is high praise. The sweet-heat wings were a surprise, with a sticky punch that I will dream about. The sweet cabbage side is unique, too, and it pairs better than you might think. I have been here twice and already decided it's worth every visit to Wichita. The only downside is the crowd at peak hours; plan for a line. But patience rewards you with fish that does not disappoint.

Da Chicken Shak lives up to its name, which is to say, if you come for catfish you better be flexible. The catfish is fine, but it's not the reason to visit. The fried chicken, as the name implies, carries the show. I had the catfish because I'm stubborn. It came out hot and decent, though I couldn't shake the feeling I should have ordered the bird. The sides were solid and the service was friendly enough. For a catfish review, this one sits in the middle, gentle and unexciting. If you are close by and craving a quick plate, it satisfies. But don't go out of your way.

Country Cafe surprised me. I expected a diner with a grumpy cook, but instead I got impeccable service and food that was served hot, which is rarer than you think. The dining room feels cozy but also somehow polished, like someone decorated it with a good heart. Regular Sunday diners were welcomed by name, which is a nice touch in this world. My catfish dinner came out with a golden crust, no complaints. The staff is attentive to requests, and the coffee never went cold. I might become one of those Sunday regulars just to feel like I belong. That says more than I can put down.

Nortons Brewing Company makes catfish worth a detour. I am not normally a catfish-and-beer guy, but here the fish is crisp and not too greasy. The sandwiches and appetizers are also quite I tried the other things after, and they were all good. Service is friendly and calm. I could see this be a habit, and I am thinking about a repeat. The space is open, with a comfortable noise level, no screaming kids in sight. The catfish is the highlight, of course, but the bread and the sides have good chemistry too. I left with a full belly and a bit of a hop. Not bad at all.

Bricktown Brewery has catfish that is absolutely worth the drive, and I do not make that claim casually. The fish was served hot and seasoned, with a crunch that held up. The service, though, that's what really steals the show. Our server handled the lunch rush like a professional, never let the table, but managed to check on us with persistence. The sides you will crave later, grandma-style mac and a strong slaw. The place has a comfortable and welcoming vibe, with big booths. I left feeling like I owed it an apology for having started this hunt with so little faith. I will come back.

Zeiner's Angler Supply is a bait and tool stop, not a restaurant, so I have to write this review for the hunter. The staff there knows their stuff. They helped me pick a couple of good deals and gave fair pricing on some gear. They even helped me wrap a gift for my nephew, which is more than the fish counter does. I also picked up some lure-making supplies, which I did not expect to do. The place has a genuine local customer base. It might not get you a dinner plate, but if you have been spoons to catch your own, this is where you start. I will say that.

KVH Chophouse is the place where you get dressed up and feel like an idiot, but it works. The service from every staff member is exceptional. I was greeted by a host and then a server and then a guy named Jade and then another named Isaiah, and every single one knew what they were doing. The appetizers are inventive, and the salads are not a side dish. The entrees came gold, with a presentation that made me want to take a picture but I did not. The din, refined yet comfortable, like a library that also allows and good food. I left feeling banker, and I am not even a banker.

Chesters Chophouse needs that has a waterfront view and live music on top of it. I usually hate loud music during dinner, but this was volume actual. The premium steaks are cooked correctly, and I saw the catfish on the menu, so I tried it too. It was fine, but the real winners are the chops likely. The mood is relaxed and unhurried; I had dessert, and coffee, and I was not rushed. Service left attention from start to finish. If you want a romantic evening, this is the table. Bring company. I bring mine, and I looked like a hero. It's a bit pricey but not always.
